1-Minute Vanilla Cookie Recipe
This 1-Minute Vanilla Cookie Recipe is Vegan,
Gluten-Free, Dairy-Free, an easy drop-cookie
recipe.
Bake in a minute in your microwave or bake
in your oven. Just mix the ingredients and drop
dough onto parchment paper.
These are soft, plain cake-like cookies which
make a great sandwich cookie or lady finger.
Fill with one of my Healthy Frostings or Drizzle
with chocolate ganache,
Servings: Makes 24 cookies
Prep Time: 10 Minutes
Total Cook Time: 15-25 Minutes
Ingredients
1½ cups oat or almond flour
Add ¾ tsp xanthan or guar gum
1/4 cup any milk
1 tsp vinegar
½ cup coconut oil
¼ cup applesauce
½ cup powdered sugar, How to make
(I grind raw sugar in my coffee grinder)
1 tsp Vanilla, or almond extract
You can turn up the flavor by adding your
favorite flavors such as almond, nutmeg,
cinnamon, orange, cardamom or pumpkin spice.
Or fill cookie sandwiches with your favorite fruit
spread, or chocolate genache.
This is a batter rather than a dough.
So you drop it from spoons or a cookie dropper
instead of rolling it out. You can cut out the centers
and decorate them after they bake and cool.
How to Make The Cookies
1. Mix milk & vinegar,
Add coconut oil, sugar applesauce and vanilla.
2. Mix in flour, to make a smooth thick batter.
3. Oven baking: Drop 24 small rounds on cookie sheet
on parchment .
4. If microwave baking, place six at a time on microwave
safe plate, on parchment paper and cook at 100% for
1.5 – 2.25 minutes, depending on the size of the cookies.
5. Give the tray a half-turn halfway through the cooking time.
6. Allow to cool on a wire rack.
7. Repeat with the remaining mixture.
OR OVEN BAKE:
8. Lay on parchment lined cookie sheet.
Bake at 350-F about 8 to 10 minutes.
After you bake them:
Spread a filling on half the uncut solid circles.
Spread the solid circles with any fruit spread, melted
chocolate, nut butter, or a healthy frosting.
Using a tiny cookie cutter cut-out the center on
the second half of the baked cookies. Place
that cut out cookie on top of the frosted solid one.
Then save the remaining cut-outs as snacks or
decorations.
Save the cutouts to eat as decorative small
cookies, as mini-treats, or freeze and and save
them to use as decorations on a frosted cake.
