Vanilla Sandwich Wafers Are
Perfect For Making Dairy-Free
Gluten-Free Cookie sandwiches.
They’re crispy and flaky.
Try these with any easy filling such as
jam, nut butter, sugarless frosting, or glaze.
These are the fastest sandwich cookies to put
together, and great if you don’t need them right
away. (You’ll need to refrigerate the dough at
least 2 hours, or overnight).
These Vanilla Sandwich Wafers make a
great snacking cookie as they are, but
using them as a sandwich makes them
amazing.
This was originally a recipe for gluten free
“Butter Thins.” To make them Dairy-Free, I
used Coconut oil instead of butter. This
combination of brown sugar, vanilla, and
cinnamon flavors created an addictive
snack cookie!
Ingredients For 18 cookies:
6 tbs. coconut oil
1/3 cup sugar (or 1/2 cup brown sugar)
1 egg (Beat in)
1/2 tsp. vanilla or almond extract
1 tbs. cinnamon
3/4 cup sifted GF flour
1/4 cup sifted GF tapioca
1/2 tsp. salt
Chill at least 2 hours or overnight
Preheat oven to 375-F
Roll out dough between two sheets of
parchment or Shape into 1 ” balls or flatten
between lightly floured handsor with a
tumbler.
Bake 10 to 12 minutes just until brown
around the edges.
To use as is decorative cookies you may simply
decorate them with sugar and cinnamon, or
press onto them colored sugar, or nutmeat or
candied cherry

1/2 cup plus 2 tbs. coconut oil
2/3 cup sugar (or 1 cup brown sugar)
2 eggs (Beat in one at a time)
1 tsp. vanilla or almond extract
2 tbs. cinnamon
1-1/2 cup sifted GF flour
1/2 cup sifted GF tapioca
1 tsp. salt
