Authentic Blintzes Filled Crépes
For Two And Popular Fillings
A (sweet or savory!) crépe pancake, Smear it
with cream cheese, mascarpone, ricotta, or cottage
cheese, and fruit spread, optional cinnamon,
coconut sugar and raisins, or cherries, blueberries,
or crushed pineapple, or sprinkled with powdered
coconut sugar.
Fold over or roll up and serve the crepes with
your favorite fillings and toppings. Serve with a
drizzle of fruit syrup, or whipped cream, ice cream,
or just powdered sugar.
Authentic Blintzes Filled Crépes
Ingredients
1 cup of any milk
1 large egg
1/2 cup all-purpose flour
1/8 teaspoon salt
2 tablespoons olive or coconut oil melted & divided
OPTIONAL: 1 tablespoon coconut sugar
Instructions
In a blender, add the milk, egg, sugar, flour,
salt, and 2 teaspoons of the melted oil.
(Reserve the rest of the oil for greasing
the crepe pan).
Puree the mixture for about 30 seconds on high,
and then turn off the blender and let it rest for
about 5 minutes.
Meanwhile, place your crepe pan over medium
heat, and brush with some of the oil.
Ladle 1/2 cup of the batter into the hot crepe pan,
and quickly tilt the pan until the surface is covered
with the batter.
Cook the crepe on the first side until it easily
releases when you run a spatula around all of the
edges. Loosen and remove the crepe. Lay it
on a platter, cooked side up.
Place a small portion of your favorite filling
about 1-1/2 inches from each edge. Bend the
side edges inward over the filling.
Then, bend the wide edge over the filling and
start rolling like a jelly roll.Continue to cook on
the second side until golden brown spots form.
Remove the
crepe from the pan place it on a paper
towel-lined plate.
Cook the rest of the batter (you should get
2 more crepes from this batter).

To freeze and use as needed place them (between
paper towels) into a freezer storage bag and freeze
them upto 2 months until needed.
