Creamy Dairy-Free Mango Popsicle Recipe

Dairy-Free, Made with Healthy Fresh Mango
or Mixed Berry. No ice-cream churn needed.
Have you looked at the ingredients of most
packaged ice cream lately? We’ve decided these
delicious homemade frozen treats will be our
only ice cream.
I used to buy the well known all-natural brand until
they changed their ingredients. Watch out for “No-sugar-
added.” It is an intentional deception. Manufacturers should
be required to state just as boldly, artificially sweetened!

If you can’t find popsicle molds locally, you can
find an abundance of choices online, including
Walmart, Bed Bath and Beyond, and Amazon.
For dairy-free fudgsicles I use coconut cream
in place of yogurt.
I look for at least 75% coconut and 22% fat.
Unlike other fats, coconut saturated fat is
heart-healthy omega 3.

This Recipe Makes 6 molded popsicles.
Ingredients:
1/3 cup coconut cream
(You can also use non-dairy yogurt).
1+1/4 cups mango slices
1 small frozen banana broken in pieces
1 to 2 tbs. maple syrup (to taste) Some sweetness
gets reduced when frozen. (Don’t use sugar-free
sweetener. It tends to be too icy).
1/4 tsp corn starch or tapioca
1/8 tsp salt
1/2 teaspoon of vanilla or vodka will help keep
mixture from freezing rock hard.
Optional: Sprinkles
Instructions
(You can also use non-dairy yogurt). If you want the the classic tart yogurt
flavor, you may add apple cider vinegar to taste (1/2 tsp to 1 tsp).
Carefully peel the mango pieces. Combine all ingredients in
food processor until smooth. (Omit vanilla if using vanilla-flavored yogurt.)
I recommend using a food processor or blender or immersion
blender to ensure thorough blending. Taste, and add more
sweetener if needed – you want the mixture to taste a little too
sweet, as sweetness level will decrease once frozen.
Here I used 2 mixed packs, 6 oz each, of Raspberry and
Blackberry instead of Mango. I mashed them, then pressed
them through a strainer to hold back the seeds, then added
to the blender. For the kids, just press the moist pops on a
dish of sprinkles.
Pour into popsicle molds. Stand on flat surface in
freezer. After about a 1/2 hour, insert popsicle
sticks into the fudgsicles and return them to the
freezer. Allow about 6 hours to freeze and serve.

How to Prepare a Raw Mango For Fancy and Practical Eating
1. Hold the mango on its side and cut down on either side of the central seed. You will end with two big “halves” plus the central seed.
2. Place each half on the cutting board with peel facing down and cut the exposed flesh in a horizontal and vertical pattern, taking care not to cut too deep through the skin.
3. Then invert the whole half to push out the cubes as shown in the photo above.
Monkeys eat the seed from the green mango, which Ayurvedic healers suggest gives the monkey its energy and powerful strength to jump in the tress.
Cautions:
If you have a latex allergy, a reaction is possible with mangos, particularly green mangos. This reaction develops because of anacardic acid.
Mango peel and sap contain urushiol, the chemical in poison ivy and poison sumac which can cause an allergic reaction in susceptible individuals.
Mangos are ripened by some dealers using calcium carbide, which can cause serious health problems (one more reason to buy organic). If you do have inorganic mangos, wash them properly before consuming or soak overnight in water.
