Gluten-Free Flourless Blintzes Egg-rolls Tortilla-Wraps
Amazing! FAST! Flourless, *Egg-free Option,
So versatile you can use it as:
Blintzes, Tortilla-Wraps, Egg-rolls, Crepes,
Sugar-Free, Gluten-Free, Dairy-Free,
Dairy-Free, Gluten-Free, Crepes
Yield: 2 Total time: 10 minutes
These are so light and delicious. Not like flour
or cornmeal-laden tortillas. They’re perfectly
flexible without breaking, to add your favorite
fillings.
If you fear detecting banana flavor, which I have
not noticed, add 1/2 a tsp. of lemon juice.
They are sweetened (if you wish them to be),
with overripe bananas,
But if you want them savory instead,
just use yellow bananas.
Whisk Together:
2-Ingredients:
1 large egg with
1/2 a banana
For a thinner batter add water or dairy-free milk
a tbs. at a time.
Met 1-2 tbs. of oil (olive avocado or coconut)
in 8″ or 10″ fry pan.
Drop batter by ladle on hot oil.
Tilt pan quickly side to side to spread a thin
even layer, the size and thinness you prefer.
When it holds its shape flip over.
*(Vegan if using a flaxseed or chia seed egg.
Not tried yet).
Fold over and lightly fry on lightly on underside.
Spread filling on browned side. Fold the filled
bread over and brown lightly.
Remove to cooling rack.
For vegan. eggless, Use a *flaxseed egg.
*A flaxseed egg is a mixture of .
1 tbs. ground flaxseed, or (chia seed) in 3tbs. hot water.
Mix and let it set until it becomes glutenous.
It works in most recipes that call for one egg,
but there can be exceptions.
