Gluten-Free Dairy-Free Cherry or
Blueberry Filling and Topping
I’ve stored this topping in a jar in the fridge for
up to 10 days. I just use it on my yogurt, and
for ice cream or a slice of dairy free cheese cake.
You can use fresh or frozen fruit. Be sure to remove
cherry pits and wash and dry blueberries. Remove
any leaves or stems.
Ingredients:
14.5 oz. tart cherries in juice
1/3 cup coconut sugar
1 tablespoon lime or lemon juice
pinch kosher salt
1 tablespoon tapioca starch
1/2 teaspoon almond extract
Bring all ingredients to a gentle simmer in a medium
saucepan until thickened. Cool completely. Store
this topping in a jar in the fridge for up to 10 days.
