Gluten-Free, Dairy-Free, Cinnamon-Bun Mug Recipe
1-Minute Cinnamon Bun Muffin Mug Recipe
Low-Carb, Dairy-Free, Flour and Gluten free
in the microwave or baked.
This is a quick recipe to have a satisfying healthy
piece of cake any time. I gave up store-bought
cakes and buns to control the ingredients. I prefer
to avoid chemical additives, fructose, excessive
sugar and unhealthy sugar substitutes.
This bun is delicious, and easy to make from
common ingredients. I topped this one with fruit preserves,
cinnamon, and coconut cream whipped cream.

Ingredients:
1 Lg. egg or *flax egg
**2 tbs. Greek or dairy-free yogurt
1-2 tsp maple syrup or honey (to taste)
1 tbs. flax meal
2 tsp almond flour or oat flour,
(OR another tbs. of flax Meal)
*Flax egg: 1tbs. ground flax seed + 3
tbs. hot water. let sit a few mins. until gelled.
**Yogurt substitute coconut cream or soy milk +
1/4 tsp vinegar (Let sit 5 minutes until thickened)
OPTIONAL ADD-INS:
1 tbs. raisins dried berries, or dates
1 tsp cinnamon
1 tbs. mashed ripe banana
1 tbs. chopped walnuts
Chocolate chip muffin:
1 tbsp. chocolate chips or
OR MAKE IT A CHOCOLATE MUFFIN
Add tbs. dark chocolate or cacao +1/4 tsp
water or oil melted 20 secs. in microwave
add sweetener (to taste)
Instructions:
Grease an oven/or microwave-safe mug and
dust with flour or powdered sugar.
TIP: Put a circle of parchment in the bottom
for easy removal.
Whisk egg until light and foamy about 1 minute. Stir in
yogurt or coconut cream + vinegar mixture.
(Or other liquid choices).
Add sweetener.
Stir in flax meal until well-blended, about a minute.
Stir in flour and raisins.
TIP: I press coconut flour through a small strainer to
eliminate lumps.
Pour batter into prepared mug. Microwave on high
2.25 minutes (in 800 watt microwave). OR: Bake in
a 350-F oven 20 minutes.
Remove from microwave and turn mug upside down
on plate for bun to fall out and cool.
Quick Easy Toppings:
You may top with fruit spread or syrup
I used coconut cream whipped cream (see recipe on this website).
Dust with a mixture of 1 tsp cinnamon + 1 tbsp powdered sugar
OR Make a vanilla glaze:
Mix to make a glaze.
Mix 1/8 tsp vanilla + 1 tbsp powdered sugar dissolved in,
2 tsp coconut cream heated in microwave 30-40 seconds
for smoothness. Add 3 drops of vanilla or almond extract.
OR For chocolate glaze:
Melt 1 tbsp chocolate with 1/2 tsp coconut oil
in microwave 15 – 20 seconds for chocolate glaze.
Glaze will firm up in the fridge.
