A Healthy Oven Baked Banana Bread Recipe!
A quick beautiful loaf cake that you’ll be proud
to serve as dessert as well as enjoy for breakfast,
or tea and coffee breaks.
Amazingly quick and easy oven baked version
of my Best-Ever Banana Bread. Gluten-free,
Dairy-Free, Refined Sugar-Free. A healthy
low calorie treat.

Oven Baked, Gluten-free, Dairy-Free, Vegan Banana Bread
Ingredients
1-1/2 cups oat flour
1/2 cup tapioca starch/flour
1 tsp xanthan gum
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
1/2 tsp cinnamon, optional
1 1/2 cup mashed, overripe banana (360g)
1/2 cup non-dairy yogurt, (or coconut cream
mixed with 1 tsp. cider vinegar set until thickened).
1/2 cup pure maple syrup, honey, or agave
Taste for sweetness.
1/3 cup oil
2 tsp pure vanilla extract
optional:
1/2 cup chopped nuts and 1/2 cup dried fruit,
Oven-Baked Banana Bread Instructions
Preheat oven to 350 F. Grease a 9×5 loaf pan, or line with
parchment. Set aside.
Combine dry ingredients in a mixing bowl.
Whisk liquid ingredients in a separate bowl. Pour wet into
dry, and stir to form a batter. Smooth into the prepared pan.
If desired, press chocolate chips into the top.
Bake on the center rack 30 minutes, then do not open the
oven door but turn off the heat and let sit in the closed oven
10 additional minutes. Let cool completely.
Cover and refrigerate overnight. Taste and texture are much
better the second day (and even better the third day as it gets
sweeter).
Leftovers can be sliced (divided with parchment strips)
and frozen for up to a month.

A quick delicious cake-like machine banana bread
for the bread machine. Use the DOUGH setting
for mixing, then the BAKE setting with the control
set to light.”
Ingredients
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise
1-1/2 cups oat flour
1/2 cup tapioca starch/flour
1 tsp xanthan gum
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup raw or brown sugar
1 teaspoon ground cinnamon
1/2 cup snipped dates, dried berries, or raisins
1/2 cup walnuts chopped
Directions
Place ingredients in the pan of the bread machine.
Liquids first. Select the Dough setting, and press Start.
Mix the bread for 3 to 5 minutes, only until the bananas
are mashed and all ingredients are thoroughly combined.
If necessary, use a rubber spatula to push the dough
from the sides of the bread pan.
When 3 to 5 minutes have passed on the clock display,
press Stop. Do not continue mixing. Smooth out the top
of the loaf with the rubber spatula.
Select the Bake setting, and press Start. The Bake cycle
time may vary with machines, but should be about 50 minutes.
To test the bread for doneness, insert a toothpick into the
center top. Remove the toothpick. If the bread is done, the
toothpick will come out clean. If there is batter on the toothpick,
reset the machine on Bake and continue to bake an additional
10 to 15 minutes. Test again with the toothpick to ensure the
bread is completely baked. Remove the pan from the machine,
but allow the bread to remain in the pan for 10 minutes.
Remove the bread to cool completely on a wire rack.
