Gluten-Free Hamotzi Challah Recipe

(Hamotzi is the Hebrew blessing said over

bread, usually a braided dough bread.)

This Recipe Is A Quick and Easy Batter
(instead of  traditional dough).


You can Bake This Hamotzi Challah
In a silicone mold or any standard tins.
in a Microwave, (
or pre-heated Oven).

 

 

This recipe can also make sweet or savory quick
gluten-free sandwich buns, or even honey-glazed
cinnamon tea cakes! 

 

Here is a quick, simple recipe for gluten-free (Hamotzi)
challah or dinner rolls or tea cakes from a batter that bakes in a microwave or oven.

 

 

How to Make 8 BIG (Hamotzi)
Challah Dinner
Rolls
(even sandwich rolls),
 from a batter
(in a Microwave or standard Oven)

INGREDIENTS:

(If for Hamotzi, use only oat flour)

Whisk these dry ingredients together.

1 cup tapioca or arrowroot
2 cups oat flour (or any gf or all purpose) or make your own
3/4 tsp salt

2-1/4 tsp baking powder or yeast
        (yeast required *if for Shabbat Hamotzi blessing).
1¾ tsp xanthan or guar gum or ground flaxseed or chia seed
        (omit if you are using a milk that contains gum).

 

Mix & Add Room-temperature Wet ingredients:

4 eggs beaten (or vegan egg subs.)
2 tbs. oil (olive or avocado)

1/4 cup + 2 tbs.(6 tbs.) honey or maple syrup (or
date honey, or coconut sugar)

1 cup very warm non dairy milk (or water for Shabbat Challah)
1/4 cup + 2 tbs. (6 tbs.) applesauce unsweetened 

Batter will be quite thick, like buttermilk pancakes.
If it is too thick to pour off a large serving spoon,
add more warm water 1 tbs. at a time until it can.


Fold in Optional add-ins:

1 tsp. cinnamon,
(or up to 1/4 tsp. each of your favorite herbs or spices).
1 tsp extract vanilla, almond, orange.

4 to 8  tbs. frozen blueberries, dates or any
chopped dried fruit, or chocolate chips.

(Hamotzi blessing.requires: Yeast instead of baking
powder. Also required, is one of the 5 ‘biblical grains’
of which OAT is the only grain that is gluten-free
.)

I added the liquids, and mixed until it became a thick batter
that can drop off a spoon to fill the molds.  I covered the molds,
loosely with parchment paper let this rise in pre-warmed oven
with the light on
for 25 minutes, until it was puffy-looking, but
not doubled.


To Microwave:
microwave full power about 2 minutes,
(2 rolls at a time), until toothpick comes out clean.
Add 10 or 20 seconds if needed.

Give it Two-Minutes and check it. When done they pull
away from the mold slightly, and a toothpick inserted
in the center comes out clean.

Microwaves vary, so you may need to add
10 or 20 seconds at a time and check again, until done.

To Oven Bake: Preheat to 350-F. Bake about 25 minutes
or until an inserted toothpick comes out clean.

 

Use a silicone or tin challah mold, or muffin tins,
or oven-safe bowls.
You can make this gluten-free
Hamotzi Challah batter recipe yeast-free *(except, yeast
is required for
the Hamotzi bread blessing).
It’s dairy-free,
even refined sugar free, using honey instead.


(Or Oven-bake about 25 minutes in a preheated 350º oven)

Pop it into the preheated oven until browned enough.
Voila! Gluten Free *Hamotzi Challah in 45 total minutes!
