Quick Popover Dinner Roll Recipe
Probably the quickest, easiest, most tender rolls
you’ll ever make…and without yeast or dairy!

You usually have the ingredients on hand for these.
If you just have an urge for homemade rolls and soup,
or salad… or if friends will be dropping in, it’s what to
make for a cheese spread, or jam and tea!
Nobody doesn’t LOVE these light, puffy popovers.
It is the eggs that make them what they are, so
this isn’t vegan,
Yields about 11-12 rolls.
Ingredients:
1-1/4 cup oat flour
1/2 cup tapioca
1/4 tsp. xanthan gum
1/2 tsp salt
1-1/4 cups any non- dairy milk
2 tbs. coconut oil
3 eggs
Optional: 2 tbs. sweetener, (honey, maple syrup,
date syrup),
OR: add 1/4 tsp. garlic powder, rosemary,
basil, or any dried seasoning you prefer to
batter or to 1/2 cup of cream cheese.
Instructions:
Preheat oven to 450º-F.
Beat eggs well. Add milk and oil.
Place flour and salt in large mixing bowl.
Make a well in the flour. Pour in liquid ingredients.
Beat with rotary or electric beater until smooth
about 1 – 2 minutes.
Grease muffin tin and preheat it in 450º-F oven 5 minutes
or until hot.
Fill pre-heated muffin-wells 1/2 full. Place in preheated oven
and immediately reduce heat to 375-F.
Continue to bake about 20-30 minutes or until
inserted toothpick comes out clean.
Will keep in airtight container in Fridge several days,
Or you can store container in freezer and use as needed.
