Gluten-Free Vegan Nut Cookies
Bake in oven or microwave!
Easy, Healthy Tea Time Nut Cookies.
Dairy-Free, Gluten-Free, Low carb, No
Added Sweetener Needed. Makes 24
Using cut-up dates and sweet overripe banana,
this recipe may satisfy an urge for sweets
without needing added sweetener. If you do
want a sweeter taste, you’ll use a lot less
sweetener with this recipe. You may add a
tablespoon of honey, or maple syrup.
Nut Cookies
Ingredients
1/2 cup almond flour (or ground walnuts)
Plus 1/4 cup ground walnuts to press on cookie
1 cup gluten-free Flax Egg
1/2 cup unsweetened applesauce
1/4 cup coconut oil
1 overripe banana
1/2 cup chopped dates
1 tbsp honey
Optional: 1 to 2 tbs. sugar (raw, brown,
or coconut).
How to Make
1. Mix 1 cup of flour (if gluten free add 1 tsp xanthan gum) with
1/2 cup almond flour, (or ground walnuts),1 tsp baking powder,
1/2 tsp baking soda, 1/2 tsp salt. 1 tbsp honey, 1 tsp cinnamon,
egg, coconut oil, sugar, applesauce, banana, dates and almond
extract together.
2. Whip until it forms a smooth dough.
3. Make 24 small balls and flatten with a fork.
Optional: Sprinkle with chopped nuts and
press into dough.
4. Place six at a time on a microwave baking
tray. Give the tray a half turn halfway through
the cooking time.
5. OR: Place on lightly greased baking parchment
paper and bake at 350-F for 10 – 15 minutes.
6.Allow to cool on a wire rack.
