Creamy Chocolate Fudge Popsicle Recipe
No ice-cream churn needed
Dairy-free (Kosher Pareve)

4 to 6 Fudgesicle
This recipe filled my processor.
(For 8, make this amount twice.)

Fudgesicle Recipe
(all ingredients at room temperature.)

1 defrosted overripe sliced banana
     (Room Temperature)

Need ripe bananas fast?

1 cup +2 tbs. coconut cream full fat (with no additives but water)
(Low fat milk becomes too frozen)

4 tbs. dark chocolate broken
1 tbs. unsweetened Cocoa or Cacao
melted with
1 tsp coconut oil and 1 tbs maple syrup)
1 to 3 tbs. maple syrup or honey (to taste).
It becomes a bit less sweet when frozen.
(Do not use Sugar-free sweetener. It
tends to be too icy).

1/8 tsp salt
1/4 tsp tapioca starch

1/2 tsp of vanilla or vodka will help keep
fudge pops from freezing rock hard.

OPTIONAL:
Mix in 1 to 3 tbs. tahini, peanut, (or any nut) butter
which makes it extra creamy.

Instructions:

Dairy-free fudgsicles ( I use coconut cream in place
of yogurt).
If you want the the classic tart yogurt flavor,
you may add to the coconut cream: 1/2 tsp to 1 tsp
apple cider vinegar to taste. You can alternatively use
non-dairy yogurt.

Carefully melt the chocolate pieces with a bit of
coconut oil. I give them 20 seconds at
a time in the microwave and stir. Ingredients
need to be room temperature to keep
chocolate in a liquid state for blending.

Combine all ingredients until smooth.
(Omit the vanilla if using vanilla-flavored yogurt.)

I recommend using a food processor or blender or
immersion blender to ensure thorough blending.

Taste, and add more sweetener if needed – you
want the mixture to taste a little too sweet, as
sweetness level will decrease once frozen.

Pour into popsicle molds or dixie cups. Freeze.
After about a 1/2 hour, I insert popsicle sticks into
the fudgsicles
and return them to the freezer.

Tip: To re-use your molds, you can carefully run tops of
frozen pops (in molds) under water, just until they let go.
Lay the frozen pops in an airtight container in the freezer.
Separate with foil if necessary.

The Health benefits of chocolate.

Today, chocolate is lauded for its tremendous antioxidant
potential. The higher the cocoa
content, the more health benefits
there are and the less sugar content, which is better for overall
health.

”The recent discovery of biologically active phenolic compounds
in cocoa has stimulated research on its effects in aging, oxidative
stress, blood pressure regulation, and atherosclerosis.”

The potential benefits of daily chocolate consumption, may include:
Improved liver enzyme levels, preventing cognitive decline, reduced
insulin resistance, reducing the risk of cardiovascular problems,
might help reduce low-density lipoprotein (LDL) cholesterol levels,
also known as “bad fats.

Dark chocolate has the highest cocoa content, which means it has
the highest levels of antioxidants –specifically, flavonoids – which
are molecules that can prevent some forms of cell damage.

Those who eat chocolate every day were found to have reduced
insulin resistance and The effect was stronger the higher the
chocolate consumption, the team reports.

Drinking tea and coffee, rich in the
antioxidants polyphenols, have the
potential to spur chocolate’s benefits
for reduced risk
of developing diabetes,
heart disease, or stroke.

Expectant mothers: eating 30 grams
of chocolate every day during pregnancy
might benefit fetal growth and development.

** Studies suggest moderate chocolate
consumption at least once weekly.
There are health benefits to chocolate,
and, there are negative aspects to chocolate. As ever, moderation
is the key. Overconsumption can lead to health problems, such as
tooth decay and obesity.
