Shakshuka in a Microwave Mug
Microwave Shakshuka in a Mug
This recipe will inspire you to eat your breakfast
or have a healthy lunch or mid-day snack.
You are actually making a poached egg
in tomato sauce in the microwave.
As a lunch or dinner for one, serve on a
bed of pasta or rice or homemade toast with
a crisp green salad or broccoli.

You can make your own tasty sauce
by combining these ingredients:
You may want to top it with coriander
and feta, I prefer melting a thin slice of
provolone or mozzarella on top.
Shakshouka Tomato Sauce
(I’ve used prepared pizza sauce),
Ingredients
1/3 cup (4 fl oz/120 ml) tomato sauce
2 to 3 tbs. water
1 egg
Optional Seasonings:
1 teaspoon cumin
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dry oregano
1 pinch red pepper flakes
Optional:
Meltable Vegetarian or Mozzarella Cheese
2 Tbs. sauteed mushrooms, sliced.
Instructions
In a greased microwavable mug combine the
tomato sauce and spices.
Once your sauce is mixed, crack your egg
into the center of the mug.
I poke the yolk with a knife point to prevent exploding.
Cover with plastic wrap poked with vent holes or use
a microwave cover. (It can splatter a bit).
Microwave for 30 second intervals or until your egg
white is fully cooked and the yolk is slightly set.
Mine took 90 seconds.
(timing is based on my 1200W microwave so your
timing might vary)

Cooking time will vary greatly depending on your microwave
and the width and depth of the mug. The mugs I use are small,
bowls and will hold roughly 6oz (¾ to 1 cup) of food.
