Vegan Oil Free Gluten-Free Chocolate Cake
9×13 Sheet
A Quick and easy cake any time you want a
nice looking cake in a hurry. Fluffy and surprisingly
high layer with a soft crumb, and who’d believe
it’s healthy for you?
Ingredients
1 cup 4 small very ripe bananas
¼ cup coconut sugar
1 tsp. molasses or date honey
2 lg. eggs
(or vegan 1/2 cup applesauce or mashed banana)
1/2 cup any milk
2/3 cup of filtered water
2/3 cups oat flour
1/3 cup tapioca
¼ cup unsweetened baking cocoa
1-1/2 tsp baking soda
1-1/2 tsp baking soda
1/2 tsp salt
⅔ cup semi-sweet chocolate chips, divided
Optional: Top the batter with 1/2 cup chopped nuts
Instructions
Preheat oven to 350 degrees.
Spray 9×13 baking dish with non-stick cooking spray
or parchment-lined.
Mash bananas in a medium size bowl.
Stir in sugars, eggs, milk, and water, and until
thoroughly combined.
Stir in flour, cocoa, baking soda and salt just
until combined.
Fold in ⅓ cup of chocolate chips.
Pour this wet batter into prepared dish. Sprinkle remaining
chocolate chips on top. Add optional chopped nuts
Bake for 33-37 minutes or until toothpick inverted
into the cake comes out clean.
Let cool, slice and serve.
